This is a special snack made with besan and ajwain seeds in the South.
Ingredients
- 1. 1 cup of besan (i have taken channa dhal).
- 1/4th cup of raw ric e flour (I have taken rice)
- 2 tbsps of ajwain or caram seeds
- 1 tbsp of butter
- 1 tbsp of hot oil
- a pinch of hing and turmeric
Here's melted butter and ground flour with all above ingredients.
Steps:
- Mix all the flour.
- Grind ajwain in mixer with water and filter it.
- Pout melted butter and hot oil into the flour.
- Add turmeric powder (optional) and asaefotida (optional).
- Add salt to taste.
- Add ajwain water (if you powdered it with flour then no need for this step).
- Mix it to a soft consistency (it must not be stiff).
- Heat oil in a kadai (preferably iron)
- Keep the oil in medium heat.
- Then take the murukku mold (grease it from inside) with sev mold and squeeze that into hot oil.
- Take it out after the noise stops and bubbles reduce.
Note: I chose to grind everything in my flour mill and then, add melted butter and hot oil.
Note: Do not add to much ajwain and it becomes bitter.
Note: Melt butter or add hot oil with butter and add it tot he flour.
Note: Water must not be very cold, use Luke warm water.
Note: Add turmeric and salt as needed. Turmeric add to it's color.
Take it from oil and store in in an air tight container after it's cooled down.
Enjoy the snack with tea or coffee!
