Ingredients
- Fresh / crunchy carrots peeled and cut into small cubes -1/2 cup
- Green Chilies 3-4 - cut into small pieces
- Red Chili powder - 1 tsp
- Jaggery powder - 1tsp
- Tamarind - a small lemon size
- Dry roasted and powdered Fenugreek Powder - 1 pinch
- Asafetida - 1 pinch
- U. Dhal, C. Dhal, mustard seeds - 1 tsp for seasoning
- Curry leaves - 1-2 for seasoning
- sesame oil - 2 tbsps for seasoning
- Soak tamarind in water and extract juice and keep it aside.
- Add sesame oil to pan .
- Add the seasoning items (mustard etc.)
- After mustard splutters add green chilies and curry leaves.
- Then add turmeric, asaefotida, chili powder & carrots.
- Now add salt and saute carrots for a min or two.
- Now add tamarind juice and jaggery.
- Allow this mixture to cook well and let the water reduce.
- Now add a pinch of dry roasted fenugreek powder.
- Switch off the stove and let it cool down.
- Sweet & sour carrot pulikachal is ready.
